Would you eat this risotto?

I made a tomato and spinach risotto last night with enough to have for lunch today and tomorrow. I put it in tupperware and left on the side to cool before I put it in the fridge - but I forgot to put it in the fridge. So it has been left out all night and is now in the fridge. I would eat it if it was pasta but worried as it is rice... Would you risk it?

I would but I often forget to put food away straight away and am never ill from it. Maybe wouldn’t feed it to kids or guests though!

I would, but my kitchen is very cool. Also assuming you have no cats.... as I won't be eating the macaroni cheese I left in a tub to cool and forgot to fridge as the cat knocked the cover off and has nibbled all around the corners and picked out all the hotdogs.

Eugh no...I got food poisoning from a risotto. Rice is one of the biggest breeding grounds. First and last time I ever had one! 😩

100% no. Rice shouldn’t be eaten once it has been at room temp for over two hours.

(And before I’m jumped on for being too picky, I have eaten and would eat against stuff that has been left out overnight, but never ever rice)

I would but would make sure it was extra hot when reheated, my Asian friend always laughs at our attitude to reheating rice as she and everyone she knows makes a big batch of rice on a Sunday and that same batch is reheated constantly for the next week.

I would - just cook it on the stove with a bit of stock until it’s piping through. Or you could make Aranchini from it.

Personally, I would not.

One of my brothers got food poisoning from reheated rice once, he was so ill. We legit thought he was going to die.

I imagine it’s microwaving rice that’s the problem. You can’t do that if the rice has a lot of gluten as the lumps don’t always cook through. But you can if you’ve cooked perfectly seperated basmati rice.

Best way to reheat clumpy rice is on the stove.

I would but my kitchen is as cold as a fridge! Just cook it well in the microwave and it will be fine

I would. add a splash of water and nuke to within an inch of its life in the microwave.
It's keeping rice warm that's most dangerous for bacteria.

A waitress in an Indonesian hotel once told me that before work every morning she cooked 2 kg of rice which was then used for all the meals for her extended family that day.

And I doubt very much that their kitchen was cool. Presumably it was all later stir-fried or somehow safely reheated. Rice for a stir fry needs to be pre cooked and cooled anyway.
I can’t help wondering whether food poisoning from rice is common in countries where this sort of practice is usual - where just about every meal is rice-based.

An Indonesian colleague of a dd once told her that to her, a meal wasn’t a proper one if it didn’t contain rice. She didn’t feel she’d eaten.

I absolutely wouldn't with rice, all the food hygiene recommendations say in the fridge with 1-2 hours. I hate food waste, but having previously been blue-lighted to hospital and spent two weeks in hospital with food poisoning, I would say it's not worth it!

The issue is that the particular toxin produced by bacteria on rice that has been left at room temp isn’t destroyed by heat. So no matter how well you reheat it, the danger is still there. I’m fairly laissez faire about leftovers but rice needs extra caution. Incidentally, the same bacterium (Bacillus cereus) can affect pasta, there was a death of a young man a few years ago after eating pasta left out for a few days.

I probably would, I live in South East Asia, most convenience stores have cooked rice in the store, not in a fridge, ready to buy and eat. All my sons school friends take rice to school in tin lunch box thingys, stored in a hot hall until lunch time to eat. I think the whole be careful with rice is a bit ott. With saying that someone will come along with a, story in a bit about the evils of eating cooked rice more than 3 hours old! 😁

Considering the population sizes of leftover rice eating countries I don’t think there’s much to worry about lol
