Would you eat this risotto?

I made a tomato and spinach risotto last night with enough to have for lunch today and tomorrow. I put it in tupperware and left on the side to cool before I put it in the fridge - but I forgot to put it in the fridge. So it has been left out all night and is now in the fridge. I would eat it if it was pasta but worried as it is rice... Would you risk it?

@swimlittlefishy you would not put cheese in a seafood risotto, but it likely would be finished with butter, and you definitely would not want to eat a seafood risotto that had been sitting out overnightGrin

I'm not sure what to make of the chorizo point but my overall view is that this would be the absolute limits of what would be considered an acceptable deviation from the standard risotto in an Italian kitchen.

As for the omission of cheese, I think this would be considered an unfortunate special diet risotto.

Risotto definitions aside, even without the dairy, I think that eating risotto left overnight is grim.

Vegetarians and vegans are a thing in Italy too, but there are lots of risottos that aren't necessarily finished with cheese.

For the purists - is it considered ‘authentic’ to stir in an egg yolk at the end?

I saw it donkeys years ago on a tv show and tried it, I don’t always do it but it does impart a delicious creamy and indulgent deliciousness.
