Would you eat this risotto?

I made a tomato and spinach risotto last night with enough to have for lunch today and tomorrow. I put it in tupperware and left on the side to cool before I put it in the fridge - but I forgot to put it in the fridge. So it has been left out all night and is now in the fridge. I would eat it if it was pasta but worried as it is rice... Would you risk it?

I make fakey arancini with leftover risotto. Maybe try that (roll into balls, coat with breadcrumbs and fry or shove in the oven). Yum.

Some people won’t touch ‘old’ rice but I go with MIl who now from the ME. My sister won’t touch it but she’s from Glasgow...

I have only ever had food poisoning once and it was from reheated rice. I've never been so ill in my life, it was years ago and I still remember it well so no, I definitely wouldn't.
I’ve only had food poisoning twice - once was from egg fried rice (so more likely a dodgy egg) and the second was from milk (I had a latte and thought it tasted a wee bit odd - turns out the fridges were broken and the milk had turned). I’ve never poisoned myself.

I would but would make sure it was extra hot when reheated, my Asian friend always laughs at our attitude to reheating rice as she and everyone she knows makes a big batch of rice on a Sunday and that same batch is reheated constantly for the next week.
I've heard this too, so why do Westerners have this obsessive fear of rice causing food poisoning, I wonder? I only heard about the risk as an adult.

I probably wouldn't and my standards are low.
I lived in Africa and ate rice that had been sitting out most days. I was ill a lot, but developed resistance over time I think.

well, as I haven't given you the recipe how can you possibly say that they are or aren't?

Just because you have rigid idea of what risotto should be, doesn't mean it should be that way.

the dictionary focuses on the cooking process, stirring and adding stock, and says it can be made with meat or fish. Yes you can add cheese, but it is not compulsory.

I'd definitely eat it, I have done the same in leaving food out overnight many times and I've never been ill. Also frequently reheat rice with no ill effects, including rice from the takeaway!

I once had b cereus food poisoning and it was utterly horrific. Depends how averse you are to potentially having diarrhoea and stomach pain for a few days. I don't think
I like risotto enough for that personally. And I suspect people living in countries where rice is a staple and food hygiene is not great will have had this at some point and are then immune.

If toxins have developed from bacillus cereus no amount of nuking the rice will kill them.

I would eat potatoes and pasta that has been left out but never rice. I have had bacillus cereus poisoning and wouldn't wish that on anyone.

I wouldn't but I live in a hot country. I once left some rice out on the side to defrost while I was out for the day. Came back, ate it and got sick so never doing that again.

GreyhoundG1rl I live in Asia and don't know anyone who cooks a big batch of rice to use all week, it'd be horrible and dry. We all have rice cookers and cook the correct amount needed each day so it is fresh and fluffy. If you have leftovers it can go in a box in the fridge and be used for fried rice. This is Chinese rice, maybe Indian rice is different.

@steppemum this is a bit of a stupid conversation. It's obvious that I make traditional Italian risottos (this really is the "right" way if you are pedantic about it, which I am) and you do not.

I think it’s worth bearing in mind that many of the countries where foods such as rice are routinely eaten like this are 3rd world countries where there is already a lot of malnutrition, so food poisoning wouldn’t be as recognisable as in countries where there is not as unfortunately many sickness bugs often already exist due to contaminated water etc.

I grant you that doesn’t apply to all countries where rice is routinely eaten but it does apply to many.

I would with risotto as that's different from plain rice.

The issue with boiled or steamed plain rice is that the granular nature means it has a huge surface area per weight of substance. Mould spores can start growing on surfaces of food and so rice which has a huge surface area is more prone to host something nasty, including varieties of mould that release harmful toxins.

However, risotto is different. It is "wet" and forms a solid mass, its surface area is only the top surface of the container so is no more dangerous than pasta or any other kind of food dish. I regularly deliberately make 6 portions worth of risotto and keep the leftovers for another day, and if it's too warm to go in the fridge at bedtime I will leave it out till morning (but yes the kitchen is quite cool)

@steppemum no, but seriously, I have spent a lot of time learning about Italian cooking, and lived in Italy, and I don't think any Italian would consider a paella-like dish, or a cheeseless rice dish with chrorizo in it, to be a risotto.

but no, seriously, you are a food snob aren't you?

Loads of recipes for risotto online, some have cheese, very few have butter, some have fish, some have meat.
As I said the dictionary definition is about the cooking of the rice as it is made, not about any of the ingredients.

Wonder of wonders, not everyone is as uptight about it as you and food and people and culture move on.

Paella like, no. But cheese is not a compulsory ingredient in risotto by any stretch and adding a little chorizo to risotto doesn't make it any less risotto,
