Can I make cauliflower cheese and dauphinois 2 days beforehand and keep in fridge

Dinner party question.

Can I pre-make cauli cheese and potato dauphinois 2 days before, pop in fridge, then cook on the day?

I'm trying to minimise labour on the afternoon of.

(Note: not breaking covid rules, this is a single person living alone fully vaccinated, who has bubbled with us)

Yes and I know you didn’t ask - but are you going to serve them at the same meal? I am not sure they go together: both extremely rich, dairy based sides.

Yes I am Grin DH asked the same question.

They are guest of honours favourite, and they're vegetarian.

There will also be green veg, don't worry.

(Guest has been shielding for a long time and had requested these specifically. I wouldn't usually do them both in one meal, ha!)

If I was vegetarian I’d find dauphinois an odd potato to be offered alongside cauliflower cheese as my main course! What about baby roast potatoes, or hasselback?

In fact I would make up both dishes completely, chill and reheat rather than prep ahead of time and then cooking on the day.

I agree! But it's what guest has asked for when I asked them what they fancied, so I'm doing it.

They've been home alone eating crap ready meals for a year so I'm going to do it. But there will also be carrots, asparagus, and broccoli Grin

Oh I'm fully capable of eating 2 cheese based dishes, and then a cheeseboard for pudding! With port for a bit of colour Wink

But OP has said that the guest has been eating ready meals alone for a year and has specifically requested this combination.

They are doing a nice thing, why would it be odd?

This is what I have if we go out for a carvery. There's normally some meat free option you can chose but I just have the veg, including roast pots, mashed pots and potatoes dauphinois. And
cauliflower cheese . And cranberry sauce . Yum Grin

Im just going to do it all, I know it's a weird combo and not necessarily balanced. They're ECV and very anxious so have been waiting to be fully vaccinated.

I'm just going to provide the requested beige cheesey goodness. They can eat the green veg if they choose.

I do love green veg and meat but I'm perfectly happy to eat cheesy veg for a day. Grin

I had dauphinoise potatoes and cauliflower cheese together as part of my Christmas lunch. Your guest will love it!

Cauli will smell in your fridge so put a tbsp of bicarbonate of soda in a little bowl at the back of your fridge.
