What do you have for lunch?

I’ve always found lunch the most difficult meal of the day for some reason. It just seems to be sandwiches or....nothing! I’ll eat pretty much anything apart from baked beans and ham. Anyone got any good ideas? Thanks.

I have very boring lunches but they work for me.

I just had tomato soup with toast and houmous.

Or scrambled eggs.

Prawn salad followed by plain yogurt on workdays, beans on toast at weekends.

I don't like bread so I have pate and crackers, wraps, beans on toast or boiled eggs usually.

I have lunch as the main meal of the day, so normally something quite consistent. Pasta, rice, some bake tray, curries... salads and omelettes when there isn’t much time to eat a lot.

Today I had veggie dumplings in soja sauce and lots of Korean-style spicy veg on the side.

I'm a count on us ready meal or one of them fresh soup things from Mark's and Spencer's for work..home is normally a small tin of heinz beans, spaghetti or ravioli.

Today i had fish pie out of the freezer. Other options are avocado on toast, tomato or mushroom soup with toast and cheese, a salad if I can be bothered to chop, jkt potato, pasta pesto, sometimes a bacon sandwich.

I think lunch is tricky too OP - partly due to being gluten free and also not much into salads. Anyhoo, today I fried a very small onion and had it with two fried sweet potato croquettes (from the freezer) and added a dollop of Loyd Grossman tomato and chilli sauce. I've got pots of instant noodles made by Itsu that I add peanut flour to for protein. Sometimes I have tinned sardines on gluten-free toast, or scrambled eggs. I'm so much happier if I have a small but proper lunch.
Great fan of soup. If I'm out (in the days when...) - Pret soup. Light and filling.

Being able to have a hot lunch without having to brave the office microwave is one of the best things about WFH in my humble opinion, why would you have boring sandwiches every day Grin sorry if you are not WFH!

Soups, especially in the winter - I make my own from whatever veg we have around but supermarket ready made or even tinned is fine too. Some bread on the side if you like but I try to avoid too many carbs at lunch.

Hummus and veg sticks (other dips are available) - sometimes with some homemade baked kale crisps which are nicer than they sound (although not as nice as real crisps Sad )

Salads - warm salads feel much less depressing than cold/limp ones, so things like roasted veg with some grains/puy lentils/cous cous (the microwaveable pouches from the supermarket are great) and maybe some feta cheese or halloumi (or chicken or tinned fish maybe if not veggie). I love warm butternut squash salads atm, it's a bit of a faff to prepare and roast but I think you can get ready peeled and diced cubes from the supermarket to go in oven?

Leftover dinners reheated...

Scrambled eggs/tofu 'scramble' or a poached egg on a bed of wilted spinach (+/- toast if carbs OK at lunch), maybe with some smoked salmon (if not veggie)?

Boring here too, toasted bagel with cheese spread or a pot noodle. Depending on how short a time I get.

I’ve just had a salad of mixed leaves, celery and apple, dressed with balsamic vinegar, with baked cauliflower and red onion (seasoned with lots of salt, pepper and fennel seeds then sprayed with fry light). It was Devine!

Frequently left overs. Stir frys, soup, pizza toast, hot chicken or fish fingers in a wrap with salsa and salad.

Absolutely anything and almost never sandwiches. Usually leftover dinner, or I might go out a couple of times a week. If I actually make something, it's often noodles or maybe a filled tuna pitta with cheese and salad or mezze type stuff (falafels, cous cous, hummus, halloumi, pitta).

soup, salad, bagel, scrambled egg (and smoked salmon if i'm feeling posh) on toast or bagel, "leftovers" from the night before, "ramen" bowl, jacket potatoes, wraps.

I make spicy scrambled egg most days with pepper, courgette, mushroom, spinach and jalapenos. Its filling and I have it without bread to make it low carb

I'm a big fan of itsu and would probably have it every day if I lived near one. Waitrose sells Taiko sushi and other Japanese things and I had one of them today. Or it's a sandwich. Or it's half a sandwich and soup.

Whatever we have for dinner the night before. There’s only the two of us and I find it incredibly tedious to spend time cooking a meal that is gone within 10 minutes so I always cook double and we have it for our lunch the next day.
