show-stopping veggie food

prepare ahead if possible

I am entertaining some veggie friends who are adventurous in their tastes apart from not wanting to eat cows etc. I'd like it to be hot because we will be eating outdoors in our gazebo (I feel slightly Hyacinth Bouquetish writing that) Please hit me with all your lovely things and I will be forever grateful and might even leave stuff in my will to you -probably won't-

I'm off out for a while now so won't be replying immediately

Butternut squash and sage risotto. I’m actually making this for dinner tonight. It’s really delicious. Nice salad and bread on the side.

This is my go to risotto. I've lost count how many times I've made it and it always works and is delicious.

I would suggest this though. The seasoning on the pastry is just divine. I always double the sauce quantities as we like sauce. I just sort of drape the pastry over, no neatening or crimping of edges. Really nice with some tender stem broccoli and some buttered new potatoes.

Mini Gujarati style filo samosas filled with chocolate, cinnamon and raisin paste. You can dust them with a little icing sugar to make them look extra special.

Sounds very naughty!

Ottolenghi's Spicy Mushroom Lasagne is delicious and can be made in advance and kept in the fridge before you put in the oven so needs no real last minute attention.

Use veggie cheese.

Nice as the veggie stroganoff looks, many veggies will bear deep rooted scars from terrible pubs where a greasy mushroom strog and half cooked garlic bread is the only option.

That halloumi bake is evil genius and has gone straight onto my meal plan!

thank you all - I cook a lot including veggie stuff but it's always great to hear what other people do and I've found some really interesting websites and recipes through your fantastic help which will find their way into my routines. I have so many cookery books but sometimes it's just nice to hear what others enjoy
