What can I bake

I have a whole day of nothing today and I really fancy baking as I haven't done any for ages. I'm quite good and fancy something a bit tricky.

Issue is, no one eats it except me and my mum. Dd1 may have a bit but Dd2 and dh unlikely to.

What can I make that is Easter based but not hot x buns or simmnel cake, it's too huge and/or can be frozen.

Caramel slices, really tasty but take a while to make. You could put mini eggs on them to make them more Easter like.

A Bakewell tart.
Make the pastry and jam from scratch.
You can either do an icing top or just use flakes almonds, depending on how much effort you want to go to.
Like another pp said, you could make it more Easter-like by adding some mini eggs on top.

I'm making a toffee apple cake today, not sure it's an easter bake but hopefully will be tasty.

Brownies and poke mini eggs in to the batter just before baking.

Bread rolls snipped at the top to make li'l bunny ears (currants for eyes and a wee dab of flour for the tail if you like)

My Easter cake this year is a very untraditional peanut butter and jam cake. Last year it was pistachio and rose.

Have you got the stuff to make lemon curd? You could make lemon tarts, mini lemon frangipanes, mini lemon meringues. Cupcakes with lemon curd filling. Mary Berry's whole lemon cake.

Otherwise anything with mini eggs on top. Or with creme eggs in.

My “I’m home for the weekend” choice of tricky bake is Danish pastry with various different fillings. Paul Hollywood’s recipe is the best.
