I'm puzzled by 'fish-coco' too! I like how shallots are crossed out, then reinstated with a caveat/moderator of 'pearl onions'.
I also like 'Páte' with the accent over the wrong vowel.

To complicate the ‘frix’ I think it belongs with the lardons as the pen is lighter on both words. No idea though on what it means as Freixenet was my only guess at first sight.

Could it be frisée that they’re after? Makes a good salad for boeuf bourgignon.
