Quick & Easy Pie Recipes

DH makes amazing pies, sometimes using Hairy Bikers recipes, but they can be very time consuming. Would really like recommendations for pies that are simple to put together. He would still like to make his own pastry & prefers pies that have a top & a bottom rather than just a “ lid”. We’re not big fans of puff pastry.

To be honest, I think any pie that you make your own pastry for is going to struggle to fit into the quick and easy category. It’s generally the pastry that takes the time not the filling. But that aside we really like this chicken, bacon and leek recipe.

I used to love my mum’s mince pie...mince onions carrots in a gravy. With proper potatoes and veg.

The only pie i make regularly is chicken ham and leek from Bbc good food with left over chicken.

Make up a big batch of shortcrust pastry, divide into pie-sized portions and freeze. Here is my Granny's perfect s/c pastry recipe:

Use SR flour
Half weight of fat to flour
Fat - lard* (or lard and butter, half and half)
Pinch salt
Cold fat, chop up small and rub into flour
Enough cold water to bring together
Let it rest somewhere cool before rolling out or freeze as above

Fill with whatever you like. Cheese, onion and potato is a good one. Leftover stew/casserole also.
For large, deep pies, upend an eggcup in the middle to stop top from collapsing.

*Lard is much healthier than people think. Less saturated fat than butter and makes lovely pastry.

Well,I’m definitely going to try to not fuss about my flour now and going to try the lard. If only it tasted as good as butter I’d have it on toast.I never new butter was the less healthy, of the two,I suppose it just doesn’t contain the vits that butter does.
