Too much risotto

Had a wicked craving for risotto today, and made some.
By some , I mean enough to feed an average family of 6, Blush there is just ds and I here for the next while!

Will it keep, and what else can I make with it?

I often reheat for another meal or two and have managed to do this safely for decades despite the dire warnings of the rice police.

Arancini is a good call but I can't stand all the bitty stickiness so I compromise and stir beaten egg and sometimes grated cheese and fry in flattened dollops until crispy on each side.

Freeze it, it microwaves fine, just add a splash of water to it before reheating.

It freezes fine but arancini is definitely the way to go.

I made risotto with n'duja paste stirred through last week and did arancini balls with mozzarella pearls in the centre with the leftovers 😋

I too microwave portions in a Chinese tub the day or 2 after but love it as Arancini too. BBC GoodFood has a recipe.
