Marinade Ideas

I do like a good marinade but always seem to use the same Cajun/ Mexican combo. I'm looking for some new ideas please. Also, I tend to leave overnight to get good flavour but never seem to get the 'deep penetration' Wink you get from marinated meat in the supermarket, any tips would be gratefully received. thanks

Get some acid in the marinade as well as some oil salt.

Cider, cold pressed rape seed oil and sage (British style)
Red wine, paprika, olive oil and oregano (Italian style)
White wine, olive oil and thyme (French style)
Kombucha, sesame oil, chilis and soy sauce (SE Asian style)
Rice vinegar, soy sauce, maple syrup and Dijon mustard (bastardised Japanese style)

Three favourites in my house are 1) the Mary Berry orange juice/garlic/soy sauce/honey/thyme marinade 2) teriyaki marinade (brown sugar/light soy sauce/garlic/crushed ginger) and 3) full-sugar cola with Chinese 5-spice/garlic/crushed ginger & a chicken stock cube.

All the recipes are really easy to find online. I use roasting bags to marinade in which then go straight from the fridge into the oven.

Garlic/ginger/coriander (leaf and seed)/cumin/black pepper whizzed together then stored through natural yoghurt (whizzing the yoghurt makes it too thin). That's my go to fir chicken kebabs. The yoghurt tenderises the meat too

Yogurt, lemon, garlic and Za'ataar, honey, soy sauce, ginger and garlic, hoi sin sauce (extra spices as wanted), preserved lemon paste, random spice mixes made from whatever I've got in, jerk (yum)

Also like pineapple juice with chilli and then if using chicken breasts more crushed pineapple and finely chopped red chilli spread over the chicken before baking.
Balsamic vinegar, salt and pepper

I like a Greek marinade...the bbc chicken souvlaki recipe is good. Put some slashes in the chicken and give it a good few hours (or overnight)
