If I buy an iPad and sync it with my iPhone, does that mean whoever uses it in the house can see all my emails, texts etc on the iPad? Or can you set up different user profiles on the iPad?

Yes, to your first question.

iPad is designed to be single user in that sense.

I think you could turn off certain features like not having messages or emails on the device but it would all be happening under your iCloud account.

You could create a new iCloud account just for the iPad, but then you may find that means you cant have your account purchases on there.

It really depends how you want to use it.

You can keep them separate, just need to take care when setting it up as the default is for everything to share. It's fine if you just want them separate for convenience / every day privacy, but it's quite easy to slip up with for example shared saved passwords so caution is needed if it is really important to keep them private.

If I were you I’d set the pad up with its own apple account then use family sharing to put any purchases on it.

Passwords don't sync across. I've got an email account that I use on my phone that I don't have on my ipad and vice versa.

You also need to set it to receive your text messages, so you could turn that off. I don't think you'd be able to receive text messages from a different phone though.

DH and I share one account for our phones as we set it up that way in the days before family sharing so we could both use the same apps without paying twice. We don't see each others email, messages etc, however we could if we really wanted to.

Passwords can sync across, depends how you set it up.
