How to cook a joint of beef in the slow cooker?

And what can I put with it? Ideally I'd like everything to be ready so a one pot type of thing..

Onions, carrots, celery (chopped to large chunks), cooking liquid (stock, but you can also do things like coffee), fat (I usually add a good chunk of butter on top of the beef) and beef (salt, pepper and other seasoning on top). Add some fresh herbs (thyme, rosemary, etc.) if you have them. Cook on low for 8 hours. I often also shred mine instead of slice as things like brisket will pull apart nicely after slow cooking. You can also add potatoes too, but I normally cook separately. I wouldn't cook much other eating veg in there because will be overcooked.
