Low calorie batch cook ideas

I'm losing weight and batch cooking lunches to take to work is helping massively but I'm running short of ideas to make it interesting. I'm fine having the same thing for lunch every day, but like something different week to week.

At the moment I do curries/thai curries/pasta dishes, all with a ton of veggies. I eat meat (not pork though) but prefer to keep lunches veggie for a number of reasons.

I need something filling and tasty, please help with some ideas.

I really like a bolognese on a bed of steamed kale instead of pasta. I also quite often roast a big pan of courgette, aubergine and peppers and have it cold with a tin of tuna and some light mayonnaise.

For breakfasts I used to do egg muffins with some cheese & spinach which could also work for lunches.

Stews are good. I definitely need some carbs or I don't feel full. A small amount of pasta with butternut squash and veggies does the trick but gets boring after a while.

I was thinking of egg muffins just wasn't sure what to have with. I suppose salad but again, not very filling.

I love burnt aubergine chilli (though if grilling aubergine make sure you prick it first otherwise it might be renamed exploded aubergine chilli as DD calls it).

Oohhh yes I second Pinch of Nom. We’ve had dinners from there for the last two weeks and then I’ve had the leftovers for lunch. Super easy to add to my fitness pal if you’re calorie counting as well

Frittatas. Baked in a muffin tin, or one large one cut into slices. Celeriac instead of potato in a Spanish omelette. Any sort of fridge raider soup.

I love bean chilli type things, and often have them with cottage cheese for extra protein. Sounds strange but it's really nice!

Soups are great, I batch cook in my multicooker (like an Instant pot) and freeze. 10 mins prep time and then leave it to cook while I do something else.

Cous cous works well with a load of roast veggies/herbs (quinoa also but I'm not so keen on that)

I batch cook soup and another dish at least once a week, soup usually lentil, yellow split pea and veg or something resembling bacon or chorizo which doesn't have pork? Veg with pulses for protein, minestrone, chicken and veg. Stew with any meat, fish soup either like bouillabaisse or chowder with skimmed milk and a couple of potatoes Also one bowl, quick and hot at work are (small) baked potatoes with cottage cheese and hummous or baked beans with a little bit of grated cheddar for example.
Also quick to toss on a plate is a bag of salad, which does a couple of days if you have a fridge at work and you can have it with smoked salmon, cooked chicken, feta and beetroot. Lidl do a great smoked salmon with dill dressing. I only get half an hour for lunch some days and all of those are super quick and low carb. Just a small potato to bake.
