Meal ideas - purple sprouting brocoli, kale, spring greens, savoy cabbage & spinach

Our veg box contained purple sprouting brocoli, kale, spring greens and savoy cabbage this week. Plus tomatoes and potatoes. I also already have carrots, parsnips, onions and a bag of spinach.

I'm struggling to come up with meals to use all this leafy green veg (there is several meals' worth of kale alone).

We do a meal with bacon, pasta & purple sprouting brocoli, so that's one.

We can do a stir fry and soup. Lots of soup.

Any other ideas?

Finely chop the kale and make it into a kale lasagne? Layer up chopped, cooked kale, ricotta blended with salt, cheese and nutmeg and lasagne sheets (fresh is better). Really lovely

Adapt a stuffed vine leaves recipe to a kale version.
Finely chop kale, drizzle with olive oil, season and bake in the oven for a kind of crispy seaweed dish.
Add greens to onions to make zombie onion bhajis.
Bubble and squeak will use up a fair amount of green veg if you have potatoes.

We always put spinach in a spinach and ricotta fritatta.

Other than that the obvious casserole for all the root veg, served with cabbage?

And I love lemon and garlic spring greens, it's a good bed for fish and you could use some spuds for this.

I lob spinach in everything. Pasta and curries especially!

Fry onions then fry carrot and greens, toss in some soy and a bit of sesame oil follow with some cooked noodles. More soy. Serve with a side of roasted purple sprouting broccoli dressed with lemon.

Tomato onion spinach and potato in a curry?

Cabbage I stir fry with onion and caraway seeds.

My favourite dish with kale and green veg (Tomato optional) is Sammy sea bass spaghetti by Joe Wicks

I think any of the leafy stuff can be used to make a Chinese seaweed type dish. Make some of that and get Chinese takeaway to go with.

Google kale and bean soup because there's lots of versions along that line.

Make a green pasta sauce with leftover greens;
Sweat and onion and 3 cloves garlic
Add 3 tablespoons white wine vinegar
Add greens - I use kale spinach and some leeks, but you could use anything
Blend with 3 tablespoons of olive oil until you have a sauce consistency

I like this better than pesto at the moment, serve with some sphagetti and stir fried leeks grated cheese on top.

I make a kale pesto if we have excess and it's gorgeous- on bbc food website.

We have lots of green leafy veg as a side chopped finely with garlic, rock salt and butter or with chilli, garlic and ginger for an Asian style side with Teriyaki salmon and rice/ noodles.

Golubtsi! Stuffed cabbage rolls. best thing ever. They can be simmered in a tomato sauce but I like them with sour cream as my Ukrainian grandmother used to make.

I love greens!

Pasta with green veg.
Sausage and kale casserole.
Basa gratin with spring greens. (I use a gousto recipe).
Paneer and ‘greens’ curry.

Sesame roasted oven kale, Jamie Oliver. Absolutely lovely and so easy. We sometimes have it with something sauce based like meatballs and it gives that crunch.

Don't overthink it. In the colder months I like to have leafy greens quickly blanched in boiling water then tossed in olive oil, lemon juice and a bit of garlic. Think of it as a hot side salad. You can do cabbage, kale, greens and broccoli like this and it's delicious.

I use a 300g bag of lentils (and a big bag of kale which cooks down) and it serves 8 medium bowls of soup so 2 lunches in my family... My DC love the kale in it!! It's been a lockdown lunch hit and it's healthy too...

That soup does look good, @isspringonitsway. You're right not to overthink it, @YesItsAPeacock. I sometimes forget about using things like garlic, ginger, chilli, lemon etc to add flavour.

Roasted Savoy cabbage is good - lots of recipes online, Tesco has one with blue cheese. Leek and mushroom pie/pasties, could also include chicken or bacon.
