Need delicious, quick and easy dinner for tonight

I’ve run out of ideas.

For me and housemate who cooks amazing meals and I feel v inadequate next to her cooking Grin

Needs to be

  • quick (40mins prep and cooking is perfect)
  • easy (I can’t cook...Grin )
  • delicious (a given surely!)

No allergies, any meat but probably only salmon or prawns fish wise

Hit me!

And not risotto because that’s all I ever seem to cook!

What is the weather like today? (if sunny, best not a winterish meal) And do you have an oven to use..?

Winterish:
Mince meat (in the pan first, let leak out) -potatoes (boil first, salt in the water) -broccoli (boil first, salt in the water) -white sauce (bechamelsauce) - bit of shredded emmental cheese on top - in the oven? 40 minutes, 180°C.

Springy:
Wraps with smoked salmon slices -Philadelphia or some other creamy cheese spread - chives or dill sprinkled on top
Or
Wraps with chicken breast slices (cooked with curry spices goes well), iceberg lettuce, cucumber slices, little bit of dressing...

If you make wraps, you can prepare it long beforehand and store in the fridge.

I don't know if that's too casual for your friend, though, it's not an expert dish, just really yummy and you can experiment with other flavours too, of course Grin.

Bun baking tray. Line cups, as many as you need, with bread, break an egg in, chop a bit of sliced ham in to it, grated cheese on top. Season to taste. Cook in over around 15 mins at 180. After 7 mins put long stemmed brocoli on a tray to go in oven, finely chop a chili and a garlic glove, put on tray mixed in with brocoli, oil, salt and pepper on tray, mix it all together. In oven, bring out same time as egg pie. If for a vegetarian change the ham for onion in the egg pie. 😍

Ginger chicken with sweet potato.

Peel 2 sweet pots and cut into cm cubes and pop in a 200° oven for 20 mins.

Cook 2 chicken breasts and 1 shallot in a pan. When cooked add 2 tsp of ginger puree, 0.5 of garlic, 0.25 of chilli and 1 heaped tablespoon of tomato puree. Cook for 2 mins then add 200ml of coconut milk and 200ml of chicken stock. When sauce is thickened add the sweet pots and a bag of spinach. Removed from heat and add a good glug of soy sauce and a splash of lime juice. Absolutely delicious and so easy.

Jamie Oliver's sausage bake.

Two punnets of cherry tomatoes into an oven dish - couple of garlic cloves, shake of mixed dried herbs - slosh lots of balsamic vinegar and oil in. Mix. Put six sausages in, mix again.

Shove it in the oven for 40 mins (turn the sausages halfway through).

Serve with warmed baguettes and butter to dip in the sauce.

Bacon mushroom and spinach pasta.

Put enough pasta on to boil for the amount of people eating.
Chop up 2 rashers of bacon per person or use lardons and fry in a pan until crispy. Add a handful of sliced chestnut mushrooms per person and fry until soft (add some olive oil if needed) add a grated clove of garlic and fry for 10 seconds then add a glass of white wine and reduce for few minutes. Stir in half a pack of cream cheese and a few handfuls of baby spinach leaves. Then add the drained pasta when cooked and few spoons of pasta water if needed. Season well and serve with some Parmesan and maybe a dressed green salad/garlic bread

How about salmon biryani? This one is really easy to make though we often have it with peas or soya beans rather than spinach.

Mezze. Al Fez falafel mix (unfuckupable), pittas, houmus - there are a million online recipes - zhoug, some really good tomatoes and a tabbouleh (soaked bulgur wheat, fresh mint, masses of parsley and diced tomatoes and cucumber).

I'd buy the ingredients for chicken (or prawn) fajitas and make them.

You can usually buy sachets of fajita mix in the supermarket.

Chicken breasts or raw prawns
Sour cream
Red onion
Shredded iceberg or gem lettuce
Fresh tomato
Fresh Coriander
Tortilla wraps
Cheese to grate
Avocado
Lime
Spring onion
1 Red and 1 green pepper

Get a pack of Boursin/goats cheese and put in an Ovenproof dish . Add 2 packs of cherry tomatoes, some frozen spinach and a slug of olive oil. Bake for 30 mins. Mix and serve with pasta. Delicious!

Jamie Oliver Salmon.Put salmon steaks, blanched green beans, cherry tomatoes, black olibes in a tray with lemon juice, olive oil and garlic. Put in oven for 20 mins serve with carb of choice (I like cous cous)

The quickest, easiest and most delicious things to make involve pasta, butter and cheese 😬

Tortellini with sage butter
Cook pasta
Melt butter and add equal quantity of vegetable stock, whisk until it comes to the boil
Chuck in chopped sage leaves
Drain pasta, add to sauce
Chuck grated parmesan on top
Less than 10 mins and delicious

Carbonara also easy
Fry pancetta and two whole garlic cloves in butter
Boil spaghetti
Mix three eggs with grated hard cheese (parmesan, pecorino)
Discard garlic then transfer spaghetti into frying pan, turn off heat
Add the egg and cheese mixture, keep moving to the eggs gently cook
Add pasta cooking water to make nice and glossy
Top with chopped flat leaf parsley

Really easy, very quick

I’m afraid I don’t know any healthy recipes that are quick and tasty though 😬
