Lockdown boredom has gone beyond but I seem to have got back my cooking and menu planning mojo
Not sure if the cleaning mojo will ever make a comeback Grin
I'm doing a roast beef dinner, roast potatoes, cauli cheese, red cabbage, broccoli, carrots, mashed swede and obviously Yorkshire puddings.
Leftovers will make a cottage pie at the very least for another meal
Anything else I can use the leftovers for?
Beef going in the slow cooker at midday for a nice long red wine bath Grin

I did a roast Friday.
And Ils doing one today (our bubble)
A. Day of no cooking and our house staying tidy is a dream lol.

Do a roast, cook 3 or 4 times what you actually need, then freeze the leftover sides in 2-portion containers, that way you’ll have 2 or 3 extra roasts for no extra faff or effort.

Lazy roast here -
roasted potatoes, carrots and shallots
stuffed big mushrooms
stuffing
peas
gravy
supermarket sticky toffee pudding and custard for pud

I was really fancying a pub roast but in the absence of that, this was the compromise.

I’m making a nut roast for Sunday dinner, I’m getting good at them now!! Will have with roast potatoes, home made Yorkshire’s, broccoli and carrots (abs gravy of course). Tummy is rumbling just thinking about it!
Which nut roast recipe are you using? I love nut roast but very rarely make it just for me. I assume I could freeze it in slices though?

I bought a bunch of German Alps-type things from Lidl so it's schnitzel, potato dumplings and cabbage for supper, followed by apple strudel

Sunday is cooking day here!

Scotch pancakes for breakfast, then the kids are recruited to help chop things and make sauces for two pasta dishes in the week. Roast dinner with slow cooked lamb shanks. Rice pudding cooked at the bottom of the oven while the roasties cooked. Leftover meat back in the slowcooker with leftover veg and sauce; will shortly have leftover mash thrown on top for shepherd's pie.

Now full and lazing with a cup of tea :)

Stuffed pork steak, potatoes and parsnips in the oven. Carrot and swede ready to go on the boil and some gravy too.

@RemusLupinsBiggestGroupie nut roast freezes well in slices. I often do this for vegetarian DH, make one big one and then freeze in slices and defrost 1-2 when we have a roast lunch.

I am making chicken pasta with garlic bread. Dh is making a pavlova for dessert. I love Sundays.

I had a beige brunch today hungover Onion rings, chicken nuggets, calamari and jalapeno poppers Blush Washed down with Sainsbury's pink lemonade and ice cream for afters 😋

Redeemed myself though with a healthy chilli con carne made with extra lean mince, tons of veg and the MN favourite - bulked out with lentils Wink

Usual Sunday roast here, we eat it at 5pm to accommodate various ages. We had roast chickens, roast potatoes and parsnips, mashed swede and carrots, red cabbage, cauli, stuffing, bread sauce, gravy and cranberry sauce. For those who wanted pudding there was apple and blackberry crumble and custard.

Although I say it myself, I made a lovely lasagne for dinner. Sainsbo's subbed the cheese sauce with carbonara and I used that, and it was delish! Lots of fresh garlic and basil in with the mince and homemade sauce. Fresh pasta sheets, topped with grated mature cheddar. Homemade potato wedges and lots of green salad.

Other things you could do with leftover beef,
diced & mix with leftover gravy (only a little needed) chopped fried onions, garlic, diced carrots to make a filling for Cornish pasties with shortcrust pastry, serve with mashed potatoes and any left over gravy on the side.

Or
Make a fragrant stock, cut beef into matchsticks, chop broccoli into small florets, grate some fresh carrot and use to make an Asian style broth with noodles if available, and appropriate seasoning. A nice quick lunch!

I just made a chicken arrabiatta casserole with Parmesan dumplings. Never made it before and it was yum. Defo one to add to my repertoire.

We had mushroom stroganoff for tea with pasta and salad. Lunch was hash browns, veggie sausage, toast, beans and mushrooms, i had toast and marmite first thing.

I have batch cooked today for the week so have bulgar wheat, tofu hash, roast veggies, veg curry and a couple of dressings as well as another portion of the stroganoff we had today. I have spent a lot of time on the kitchen today but it is my happy place and is preferable to cleaning 😀
