Lockdown boredom has gone beyond but I seem to have got back my cooking and menu planning mojo
Not sure if the cleaning mojo will ever make a comeback Grin
I'm doing a roast beef dinner, roast potatoes, cauli cheese, red cabbage, broccoli, carrots, mashed swede and obviously Yorkshire puddings.
Leftovers will make a cottage pie at the very least for another meal
Anything else I can use the leftovers for?
Beef going in the slow cooker at midday for a nice long red wine bath Grin

@Ninkanink - they are so nice but amazingly easy - basically heat milk, water and sugar and whisk in some cornflour and milk mixture, stir until it thickens, then pour into glasses /ramekins/small bowls and leave in fridge to set. The bay leaf syrup makes them seem very fancy although that’s just sugar and water heated up with a bay leaf.

Hotpot is smelling delicious...

Waitrose rotisserie bbq chicken with chips and beans here!

Will probably be cheese salad sandwiches/wraps or eggs on toast for dinner later.

We're having roast chicken today. Definitely roast potatoes, Yorkshire puds and gravy with it. Not sure what veg anyone fancies yet though.

Might make a slow cooker giant cookie for afters too. Dd2 usually helps to bake so I'll wait and ask her before I do it.

Do you have the recipe for the slow cooker cookie please

I agree, @Wigeon! I can cook but prefer to bake so would be happy to contribute that way. I miss baking for my co-workers...

Toad in the hole.
It was going to be roast chicken with all of the trimmings but the chicken I ordered from Tesco arrived on Thursday and which should’ve been good for 6+ days according to their site had a use by date of yesterday so I sent it back with the driver.

I’m on a Diana Henry kick at the moment, have recently bought three of her books, but Ottolenghi is on my list to purchase. We cook a lot with his recipes but we just get them online as once I get into buying recipe books I very easily get into collectors/addiction territory so I have to limit myself and not get into too many chefs at once!

I’m making a nut roast for Sunday dinner, I’m getting good at them now!! Will have with roast potatoes, home made Yorkshire’s, broccoli and carrots (abs gravy of course). Tummy is rumbling just thinking about it!

We are having fish and chips so I can just shove the trays in the oven. Tomorrow will be a roast chicken with crusty bread and salads. Tuesday will be chicken pie with mash and veggies, Wednesday home made pizza.

I'm utterly bored of providing breakfast, lunch and tea/dinner and the 1 000 000 snacks a day!

We almost always have a roast on a Sunday but I’m just not feeling it today.
So i’m doing cod, crab and watercress fishcakes with samphire and broccoli.

It's my birthday so have had croissants for breakfast, homemade sourdough toast with bacon, avocado and scrambled egg for lunch and Chinese takeaway for dinner - haven't had a Chinese takeaway in over six months and can't wait. 🥡 😋

We had veggie chilli, rice, guacamole, salsa and nachos for lunch at around 1pm. I’ve now done a thorough clean of the kitchen and they can have crumpets for tea!

massive jammy dodger blondie traybake while out walking for breakfast
prawn and avocado quesadilla for lunch
kofte in spicy tomato sauce, pittas, salad and couscous for supper

Tomorrow will be chilli con carne (in the slow cooker)
Rest of the week is:
Chicken tikka traybake (new recipe) with naan
Homemade pizzas
Jacket potato with beans and cheese or tuna.

In my oven there is a huge leg of pork slow roasting. Next to it is a whole celeriac, slow baking.

Soon, OK another couple of hours, there will also be roast potatoes and some steam fried cabbage.

Pudding will be Spotted Dick and real custard, unless I drink too much wine, then it'll be Bird's!

Massive chunk of pork leg to go in the oven shortly, all the usual roast dinner suspects alongside it, then a chocolate blancmange for pud.
