Lockdown boredom has gone beyond but I seem to have got back my cooking and menu planning mojo
Not sure if the cleaning mojo will ever make a comeback Grin
I'm doing a roast beef dinner, roast potatoes, cauli cheese, red cabbage, broccoli, carrots, mashed swede and obviously Yorkshire puddings.
Leftovers will make a cottage pie at the very least for another meal
Anything else I can use the leftovers for?
Beef going in the slow cooker at midday for a nice long red wine bath Grin

We're having roast chicken today. Definitely roast potatoes, Yorkshire puds and gravy with it. Not sure what veg anyone fancies yet though.

Might make a slow cooker giant cookie for afters too. Dd2 usually helps to bake so I'll wait and ask her before I do it.

@Hobnobswantshernameback

Ooh lamb kofta Where would I find a recipe for that?
I use an old Jamie Oliver recipe
ContessaDiPulpo · 21/02/2021 10:15

We had ful medames for breakfast (well 3 of us did; DS2 abstained Hmm) and DH and DC will have vegan bacon sandwiches later. Lunch is whatever anyone fancies (lots of fruit/veg, maybe a sandwich, some sort of protein) and dinner is vegan toad in the hole (at DH's request) with kale and carrots.

DH and I love doing the food planning for the week, it's the main source of novelty in our lives atm Grin admittedly we have 3/7 days a week where we always have the same item, every week (the DC have requested this), but that leaves 4/7 where we're allowed to shake it up a little.

In terms of activity, my DC intend to spend the days growing roots in the sofa. I'm off for a walk (yay)!

Dh is currently cooking chicken tikka on the BBQ (he was really keen to make it and so I told him no getting out of it even though it's raining), so we are having chicken tikka in wraps with yogurt, coriander, cucumbers, etc. for lunch. Probably going to the beach to take a walk and will eat our wraps there. Dinner is pasta with a mushroom and cream sauce and asparagus. Sunday dinners, if we have one after a big lunch, are usually really simple.

CeibaTree · 21/02/2021 10:26

We've got left over Thai takeaway for dinner this eve. Lunch will be something like beans on toast with a fried egg. We are having a totally lazy day at home today.

laughoutquiet · 21/02/2021 10:30

I'm doing fish pie tonight thanks to Lidl and some yellow sticker fish.

Also going to do some lunch boxes for the next couple of days for DH, along the lines of Buddha Bowls.

Sounds lovely OP!
You could use the leftovers for a curry?

I’m cooking a gigantic chilli con carne this afternoon and will be freezing the rest.
Enjoy it with steamed rice or with a jacket potato and side-salad later on in the week.
Smile

We've started having lovely lazy Sunday breakfasts that the DC say we need to keep. All sitting together at the table with pots of tea and coffee with nice cooked food. We don't have time to do this in the week, even in lockdown as DS leaves at 7:30 for school, I start work at 7:30 and DD stays in bed until three minutes before her home lessons start 😂.

Today was pancakes 😋

I'll do a late roast lunch (we're veggie but still have a lovely lunch) then a nice dog walk. Today is fake chicken so we'll have leftovers on baps for dinner.

I have a cleaner do the upstairs two floors on a Friday, as I work downstairs. Then I finish early on a Friday, so even though I cheat by having a cleaner, this does give me the cleaning mojo to make downstairs look nice for the weekend. Probably more so than before lockdown, as we are here all weekend and I relax more if it's clean.

Saturday night OH made Chinese crispy duck & pancakes which was delicious! This morning a grilled/baked full Scottish then tonight Chicken hotpot with new potatoes, broccoli & green beans.
OH going out for a cycle in a bit so I'll prep the dinner then put my feet up & read or watch a movie for a bit. Should really do bit of work for tomo but had an online uni tutorial yesterday so can't face sitting in front of the computer again.

Originalyellowbelly · 21/02/2021 10:40

Just had smoked salmon and scrambled eggs for breakfast with lovely fresh bread. We don't bother with lunch on sundays but have our main meal late afternoon which will be roast pork, stuffing, roast potatoes, cauli cheese, carrot and swede mash, cabbage and yorkie puds with loads of lovely gravy. I am making a coffee and walnut cake so will have that for dessert and probably a glass or two of wine this evening.

ohtheholidays · 21/02/2021 10:42

I'm just going to tuck into Lorne sausage toasted sandwich for my breakfast.

Lunch I think we'll pick something nice up from tescos.

Dinner is going to be roast pork(chicken for me)roast potatoes,mashed potatoes,carrots,cauliflower cheese,roast parsnips,savoy cabbage,broccoli,gravy and Yorkshire puddings.

Pudding will be a choice of an apple or rhubarb crumble with clotted cream.

WhenTheDragonsCame · 21/02/2021 10:45

I have got into the habit during lockdown of doing a roast dinner every other Sunday. Today will be roast chicken, pigs in blankets, roast potatoes, Brussels Sprouts with bacon, cauliflower cheese, carrot and suede mash, Yorkshire puddings and gravy.

Woodlandbelle · 21/02/2021 10:47

Steak and chips with salad
I do a roast most Sundays. Just fancied less work and a change. Yesterday I batched cook so a very easy week of dinner ahead for me.

EachBleachBlairTrump · 21/02/2021 10:54

Poached eggs for breakfast, brisket chilli on the go already , I do like a roast but not every weekend, we had one last Sunday

Hobnobswantshernameback · 21/02/2021 11:02

We always eat Sunday dinner in the evening
Haven't eaten it at lunchtime in years
Found it all too rushed and stressful

I'm making Jamie's Fantastic Fish Pie. Pulling the wool over their eyes with the onion by chopping it as small as poss and segregating the prawns and eggs into a two thirds section of the baking dish as one of the ds won't eat them 🙄

Wigeon · 21/02/2021 11:10

Mmmm, I can practically smell all the Sunday lunches!

I am making a Lancashire hotpot for the first time, and yesterday I made these little set milk puddings from an Ottolenghi book for pudding today. You do a bay leaf syrup to have with them, which is delicious, and pistachios and dessicated coconut on top.

Hotpot has already been in the oven for about 30 mins, another 1.5 hrs to go...

Ninkanink · 21/02/2021 11:14

We always have roasts in the evening. Even on Christmas Day! Much more chilled. Plus we (well, I) like a lie-in and I’m not going to have a roast dinner half an hour after I’ve properly woken up...

I’ve decided on dinner! Going to do slow cooked ox cheek stew with rosemary and garlic polenta.👍

Ninkanink · 21/02/2021 11:15

@Wigeon that pudding sounds divine!

yearinyearout · 21/02/2021 11:27

These roast dinners sound amazing and I'm half wishing I'd bought a joint. Instead i'm making a moussaka and Greek salad for a change.

Alfiemoon1 · 21/02/2021 11:28

Roast beef roast potatoes broccoli and carrots and Yorkshire puddings

QueenPaw · 21/02/2021 11:30
