How long would cheese keep out of the fridge?

To enjoy cheese at it's best it needs to be room temperature, but who remembers to get it out?

What's the worst that would happen if I didn't keep it in the fridge? Would it keep a week, for example?

Is cheese always kept in the fridge?

As a general rule, matured hard cheeses are fine out of the fridge for days or even weeks, provided they’re not in direct heat. Soft and mould ripened cheeses shouldn’t be left out for more than 24 hours, because the moulds can produce mycotoxins.

I’ve kept cheddar cheese out of the fridge for a week or so when camping with the camper van and not realising the fridge had broken, and it was a bit pallid but tasted fine.
