What is the best combination of veg would you say?

We love broccoli, cauliflower, Brussels sprouts, peppers and onions with plenty of seasoning. That’s tomorrow’s veg accompaniment to our ham and roast potatoes.

Peppers, red onions, carrots, celery, tomatoes, courgette.

Mushrooms, red or yellow peppers, courgettes and onions

Peppers, aubergine, red onion, garlic, cherry tomatoes.

Fennel, pepper, onion, butternut squash, lemon, garlic

Depends what you are having it with.
I like roasted cauliflower and butternut squash with Indian spices
Or beetroot, red onion and apple
Or mushrooms, peppers, red onion, courgette

Celariac, carrots, onions, beetroot, peppers, potato, sweet potato and courgette. All jumbled together.

Courgette, butternut squash, brussel sprouts, garlic, beetroot (maybe with aubergine as well but it takes longer to cook)

With feta cheese on top in the end

Courgette, peppers, onions and baby tomatoes.

Carrot, pepper, red onion, garlic and whatever else may need using up! Could be mushrooms, courgette, parsnip etc.
