Lockdown lunches

I am getting a bit fed up of the usual wfh lunch rotation of sandwiches, soup, salad.

I am looking for inspiration for what others are eating so I can put stuff on the shopping list for next week.

Today I am having a tuna and cheese sandwich

Today I made chicken noodles, and whilst they were cooking I cracked an egg into it and stirred it in which thickens it and makes its delicious. I also added frozen sweetcorn.

Today we've got leftover savoury rice (just rice cooked in veg stock and curry powder with some finely chopped veg popped in for the last 5 minutes) with some cold chicken.

Recently we've had:
Homemade hummus with chopped veg and ryvita
Chicken and avocado sandwiches on toasted bread
Dippy eggs and toast

Both DH and DS will happily have the same thing for lunch day in, day out. I'm sooooo sick of chicken salad I've actually started finding spinach nauseating Sad

Toasted cheese 🧀
Heinz cream of tomato soup 🥣 and sourdough bread with a ridiculous amount of butter 🧈
Pancakes 🥞
Raw veggies with dips 🥒
Couscous with tuna, spring onion, garlic, a little salt and pepper and lemon squeezed on top 🍋
Leftover rice 🍚 becomes egg fried rice
Hard boiled eggs 🥚 chopped up with butter and a little salt and eaten with toast
Hot dogs 🌭

I bought a toastie maker and that's provided a few nice lunches. Eggs are easy - poached with avocado on toast or scrambled? I get it though - it's so boring!!

Jacket potato and baked beans/leftover chilli

Cornish pasty - I play around with different fillings. Last week it was sun dried tomato, feta and spinach.

Agree, a toasted sandwich is superior in every way to a regular sandwich!
I vary the bread and have different favourite fillings for each so baguettes with egg and tomato, tuna cucumber, chicken and bacon
Panini with Brie and cranberry, Gorgonzola and thinly slices pear, cheese, tomato and Worcester sauce.
Pita with falafel and salad and yoghurt dressing, grated carrot, sliced pepper and hummus
Wraps with chicken tikka, lettuce, cucumber and mango chutney. Tuna red onion, peppers, fajita chicken and peppers
Crumpets with cheese and marmite
Bagels with cream cheese
On toast; eggs, tomatoes, beans, garlic mushrooms.
Jacket potatoes with cheese, beans, coleslaw, tuna, left over chilli
Various salads, usually chicken or tuna with salad veg.
Tuna pasta salad
Roasted veg and chickpea cous cous salad
Fritata
Omelettes
Cheese and crackers

I've just had a cheese and tomato omelette with some baked beans.

I always make an extra portion of whatever we have for tea for DH to take to work for his lunch, which saves the faff of making sandwiches etc

What do you eat at the weekend?

I rarely have sandwiches unless I pick some from a shop somewhere. We have a normal lunch, and a lighter diner

This week I have had roasted veg and goats cheese frittata, homemade noodle pot with loads of veg and a butter bean dip with pitta / carrot sticks

I had leftover risotto and cold chicken today. Yesterday was minestrone soup with sundried tomato bread. Tomorrow probably leftover curry and toast.

I've just had a fritatta with cheese, bacon, spinach and tomato. It was delicious!

Thanks for asking this, so many good ideas to add to my list, thank you!

Ideas:

-Quiche and salad (you can buy a big fresh one and freeze it into portions)
-Game pie and salad (also freezable)
-Bruscetta (toast a chunky slice of bread, rub with a raw garlic clove, dump on chopped tomatoes)
-Avocado and cherry tomatoes on chunky toast (halve and warm the cherry toms in the mircowave for max. ten secs)
-Leftover risotto/spag bol/chicken fajitas/whatever you had for tea
-Sweet potato, cottage cheese, spinach and bacon bits
-Baked potato, tuna mayo/tuna chunk/beans/whatever you fancy
-Frittata and salad
-Pitta bread with fried halloumi and roast veg (or quickly dry fry sliced veg to soften/warm them after you've made the halloumi)
-Omelette
-Poached eggs/scrambled on toast
-Tinned mackerel on toast (Tesco spicy tomato tinned mackerel is my fave)
-Bagel with cream cheese and cherry toms
-Garlic bread (just harlic bread!)

We've taken to doing excess mash and roasties, and we fry these into patties, with pepper, red onion, and parsley in butter, and top it with a poached egg. It's flipping gorgeous.

Poached egg sandwich with chives is nice.

Platters - with chorizo, smoked salmon, marinaded mussels, cheese, crackers, cornicons, pickled onions, bread, crackers, grapes, cherry tomatoes, cucumber and chutney.

Saussie wrapped in bread, with fried onions and sauce.

Make your own pizzas.
