Do you find it hard to cook food if you never tasted it in real life?

Got given Georgian and Persian cookbooks for Christmas. The recipes look fabulous but I’ve only limited experience of eating either..

Do you just wing it?

I like cooking something I don't know, I have many cook books which include cuisine I never tasted before. . You can assume what it will be like by looking at the ingredients, so I would just avoid recipe that uses ingredients that I or my family don't like.
Just try it out, I'm sure it will taste great.

If you can read you can follow a recipe. Whether it tastes authentic at the end - who knows? As long as it tastes nice that's surely all that matters.
