I have 4 egg yolks and half an egg white left over from a recipe. What should I do with them?

I'd make custard with the yolks.

Gunpowder · 28/01/2021 16:40

Yes custard or lemon curd with yolks. Or Hollandaise! Yum I’m jealous.

When I have spare egg yolks I make a mountain of cookie dough, split it into three sections, add cherries/chocolate chips/stem ginger pieces, then roll it into balls and freeze in batches of 10. Then they're ready to bake for cookies for my boys to take to college, when it's open Sad

Sounds amazing!

The most fun thing to do with half an egg white is to make meringues in the microwave. All you need apart from the half egg white is 150 grammes of icing sugar. How many people are the 4 whole eggs supposed to feed tonight and how hungry are they? If it's lots, you'll have to go with French toast or egg fried rice or fried egg and chips/saute potatoes. If you have cocoa and sugar or hot chocolate powder and a butter you could use the four eggs to make chocolate souffle.

I'll be making this chocolate mousse at some point, it takes 4 egg yolks, making pavlova with the 4 egg whites.

JustFoldInTheCheese · 28/01/2021 20:40

That chocolate mousse looks amazing. Thanks for the recipe.

So I ended up going a bit curve ball, added an extra egg and making a giant Yorkshire pudding

That is a curve ball indeed! For future reference, I’d have made carbonara.

Well I was roasting a chicken for dinner (not a Mumsnet chicken apparently, as it was demolished in one sitting) so it wasn't entirely random!

@ItsDinah eh what, meringues in the microwave? Please tell me more!

The recipe is on mums net. For half egg white it would be as follows- Lightly beat the half egg white in a bowl. Sift 150grammes icing sugar into the bowl. Use your hands to knead the mix into a dough. Get a microwaveable plate and put a piece of kitchen paper on it. Break off marble size bits of the dough and put three or four on the plate. Zap in microwave for between 40 seconds and two minutes. Depends on your microwave how long this takes. The little marbles swell up to 4 times their size. Hilarious for the young. NB you must let them cool for a few minutes after cooking because they can be lava like inside. I'm not a meringue fan personally but they slip down easily with enough cream out the squirty can.

That sounds like total genius! 😁
