Green plantains - can I roast them like a potato?

I’ve got some green plantains and was idly looking up things to do with them. Websites say they are similar to potatoes in starch content when unripe so I was wondering whether I could parboil chunks and then roast them. Is this madness?

Timings would need to be altered as they’d be smaller but could it work in theory?

I would wait a few days for them to ripen and then slice and roast them - yummy!
