Kid friendly Squash recipes?? So bored of mine!

I love BN squash and usually roast it and make a pasta sauce if a veggie chilli sometimes even a curry but I’m so bored of them and have massive squash to use up.

I’m lucky that my kids aren’t too fussy but don’t feel I can be too out there or spicy.

Anyone got recipes with squash they love?

We roast and have it in a risotto with onion and bacon or roast with pork or salmon, roast red onion, feta and lettuce.

I do lovely soups that my kids love and a traybake with butternut squash chunks, local butcher sausages, peppers, Beetroot or other root veg, drizzle with olive oil and balsamic, roast in oven. Just before serving I crumble feta or goats cheese. All but one of my four kids loves it, I just don’t put cheese on theirs.

My two love it as an alternative for tomato sauce on a pizza. I cut the squash in half, drizzle with olive oil and roast....

Ooo these all sound lovely, thank you. I adore feta it goes with squash so well. Annoying I don’t have any in.

I roast it, then take the skin off and the seeds out, cut it up and put it back in the oven with feta, and a drizzle of oil, seasoning etc. While it's all back in the oven I cook whatever pasta we've got in the cupboard, then mix the cooked pasta up with the feta and squash, put some Parmesan/breadcrumbs whatever we've got on the top and stick it back in the oven for 10 mins. Goes down well but we have v young kids so possibly I would stick oodles of garlic in it and chilli if I did it for me and DH alone!
