How do you make your sausage casserole?

Boring but my DD is saying mine isn't as nice as her granny's, because I don't put beans in the base Envy

I get extra points for topping with mash and melted cheese apparently.

I'm going to make a big one today, it's freezing and I really fancy one- what can I add to make it extra nice?

You are right, proper winter fodder!
I have two, Sausage casserole with cider, apples and sage and this with a tomato base.
To be honest though I tend not to really use a recipe as such, I just use what I have to hand.

I make a cassoulet.

Cook whole sausages in the oven, make sauce in the pan - white wine, garlic, passata, red onion, leeks and borlotti beans with whatever herbs you like. Add sauce to top of sausages, then add torn bread crumbs so it covers the top and makes it crunchy. Back in the oven, finish with parsley.

Mine is very basic. Fry Chopped onion and garlic. Add tin of tomatoes, tin of beans, stock cube, Worcestershire sauce. Add grilled sausages and cook in oven for about an hour.

It's a proper traditional English sausage casserole with tomato and bean base and its delicious.

I use carrots, onions, celery and leeks sautéed for as long as I have, then add garlic, chopped tomatoes, mixed beans, herb de Provence, red wine if any is open (otherwise a glass of water), a veggie stock cube then cook for a bit meanwhile cook sausages (I bake), put together and serve. Started doing it this way as one dd is veggie, means I can save on pans.

I love sausage casserole!

Saute onions, celery and carrots. Add sausages and brown. Add passata and a tablespoon of sugar. Add fresh herbs. Serve with rice or mash.

My mum makes a curried sausage cassrole which features pineapple juice and sultanas. i have never worked out how to recreate it.

This is the cheat's version:

Buy decent sausages. This is key.

Cut sausages to required size, e.g. thirds.
Brown sausages and onions in pan.

Drain off fat and transfer sausages to slow cooker.
Add whatever you have veg-wise in the cupboard/ fridge:- carrots (fresh, frozen or tinned), baked beans, chopped mushrooms, sweet corn

Add a decent amount of pasta shapes or some peeled and chopped potatoes and a large tin of tomato soup (tinned tomatoes/ passata - add a peeled and chopped apple to sweeten) .

Stir so the ingredients are mixed and all covered by the liquid. Add some stock if it's not wet enough for this to happen.

Turn on slow cooker. Ignore it for several hours.

Stir and serve.

I use a recipe my mum used when I was growing up. Mix of lentils on the bottom of the dish (I use red lentils and Pearl barley) chopped onion and carrots. Sausages, tin of chopped tomatoes, 400ml of vegetable stock and 2 tbsp tomato purée Cook for 2 hours. Often add dumplings on top 20
Mins before the end of the cooking time. Delicious! Such good comfort food

I use this recipe basically, I do it with beef or chicken or sausages and love it.
