it’s vegan but that wasn’t intentional!

I ordered too many mushrooms in my shop this week so have been searching for good recipes. Saturday night is always chicken curry night so I thought I’d try and substitute the chicken for mushrooms. DH was up for it but DD decided to eat last nights leftover pizza instead of risking it.

What a mistake she made!!! It was honestly soooo bloody lovely even though I didn’t have any fenugreek and I used half fat coconut milk.

Let me tell you about this curry! Call me Madhur!!!

I don’t like mushrooms personally but mushrooms work amazingly well in curry, if you fancy you could add aubergine and or or lady fingers (okra) for a fuller vegetable curry if you make it again.

We usually make vegetable curry on Sat night. Roasted cauliflower adds a lot of flavour.
We tend to add what we have, also frozen veg still taste good and gives more options. At the moment we like to add celeriac, sweet potato and/or butternut squash.

Sometimes we roast beetroot as it makes the curry pink once blitzed and added!

Beetroot??? Wow that’s a new one on me! I’m guessing fresh and not the pickled out the jar variety?!

I must admit we are creatures of habit here - we rotate two curries (now three Wink) so I may have overegged the call me Madhur reference Grin

I’ll show the two I do hang on

The other is anjum again but a prawn patia with tamarind. I alternate between chicken and prawns

Omg thank you OP - I literally just made this thanks to you and it was delicious! I didn’t have any fenugreek and I used coconut cream instead of coconut milk. But if anything that made it more coconuts and so nice.

App! I'm an evangelist for this, it's great.
Free version works for 40 recipes I think, then IMO a bargain to pay the £4 and have an infinite number of recipe spaces.

I think it can find you recipes, but I use it to store mine. You can add tags on them, tags you define which is great. Also you can convert them into shopping lists which is useful / hilarious when it suggests you buy a litre of salted water in the drinks aisle...

The app I use, and I tried a few before settling, ic called Paprika. Maybe Paprika 3 or something.

I think on android it will let you have 4 devices so if you want to share with someone you need to both log in with the same user details. On apple I think you can share within your family group so eg DH can have their own account linked to you.

Happy to provide more details if needed...

Does anyone else use make base gravy and use that method before hand? Absolute game changer for making your curries take away style
