Your top 5 weekday meals

I'm trying to build up a repertoire of weekday teas so that we stop eating the same ones week in week out. I do simply cook to add some variety and ideas but this is mainly for DP and I as DSC wouldn't really like any of it yet.

So what are you top 5 weeks day dinner time meals? 😊

This is a never ending debate / struggle in my house!

These are the (current) family or child friendly meals. I also get the simply cook packs and they like the ragu and the Peruvian chicken.

Roast chicken
Chicken and veg stir fry (using left over chicken) - kids love this and it's quick
Sausage and mash abs veg
Bean stew and crunchy tacos
Sausage and bean stew pasta (using left over sausage)
Chicken fajitas - el paso spices and tortilla wrap

Our "repeat recipes" are:
Spaghetti bolognaise
Veggie fajitas or enchiladas
Chicken pie (Joe Wicks recipe)
Prawn and sweet potato Thai curry with rice (there is a Waitrose recipe for Thai curry with white fish and sweet potato but find that prawns or chicken break up less)
Tomato, bean and olive bake topped with chicken thighs and served with crusty bread (from a poster on Mumsnet!)

OH is trying to go gluten free though so cooking is becoming even more of a chore! I hate cooking, and I hate everyone moaning about what I dish up so it just becomes even more of a chore as you can't please everyone

Yours all sound yummy.

We’ve had homemade beef burgers with homemade chips (I cook these in mild olive oil with turmeric and garlic).

Chicken thighs cooked over loads of sliced red and yellow peppers which go soft and yummy

Lentil Dahl , rice and poppadums (I fry these in minutes as they go all sorts of exciting shapes)

Salmon cooked with ginger, soy sauce and honey and noodles

We discovered this yummy 5 minute pudding where you blend frozen strawberries with a bit of Greek yoghurt or cream - instant amazing gelato that rivalled italian equivalent I thought !

Most of the time I’m fully out of ideas and we end up with pasta and pesto with crème fraiche which I’m bored of. Or egg fried rice while also bored of

Sunday is always a full on roast, with roast potatoes, Yorkshire puds and lots of veg

Kedgeree, or variations thereof. We prefer to use smoked mackerel (less bones) and don't always bother with the egg. Always contains a variety of veg and green leaves.

Red lentil and veg curry with rice, sometimes add a boiled egg and some raisins for a 70s style egg curry.

Chickpea spinach and sweet potato curry (my personal favourite), Sam stern recipe.

Potato wedges with assorted root veg/ frozen peas etc and eggs baked in ramekins with a bit of butter for the last few minutes of the wedges cooking time. Or sausages or fish fingers.

Indonesian hotpot - a very old bbc good food recipe I think, basically noodles cooked in a spicy peanut butter sauce with white fish, peppers and peas. It has spring onions, garlic, ginger, chilli, but somehow manages not to be too hot. I can try and find the full recipe tomorrow, it's amazing

Just me and DP, so we quite often have things that do two nights or make a portion for the freezer. I’m a one-pot cook, DP is much more sophisticated. Staple meals here are:

Chilli with rice, then the following day in a jacket potato with salad
Spaghetti bolognese
Nigel Slater’s sausage and mustard pasta
Chickpea curry with pita breads
Chicken satay curry
Pasta bake - with chorizo, or chicken, or just veg
Chicken fajitas
Sausages, mash, green veg
Sausage and butterbean casserole - again with mash
Shop bought chicken pie, or quiche, with potatoes, chips, green veg, or beans
Brinner - full English for dinner
Risotto - I do a leek and pancetta one, DP does a chicken and red pepper one if we have had a roast
Veggie burgers in brioche buns, chips, salad
Macaroni cheese
Spaghetti carbonara
Lasagne - sometimes a shop one
Cottage pie - again, sometimes the M&S Gastropub one

We do a menu plan on a Sunday and try and cook things that have the same base fresh ingredients so no food waste - eg this week we had the sausage and butterbean casserole, then today I made the chickpea curry, because both involve celery and carrots, tomorrow is chicken pie which we will have with the remaining potatoes.

At weekends we often have an M&S dine in thing, or a takeaway. We used to go out ?

Pasta (Bolognese, pesto, seafood, other concoctions), risotto (various), curries (various), chops/pie/chicken and veg, stir fry, fish, paella, enchiladas, fajitas, tray bakes (lasagna, shepherds pie etc) ... does get in a rut but I have maybe 20 everyday things (under £3 a head)
