What goes with Mediterranean pork loins?

I've got Mediterranean pork loins for tea tonight, with veg, but don't know what carb to have and the kids have said no mash. Any ideas?

roasted sweet potatoes are nice, we often do a vege bake with eg sweet potatoes, normal spuds, garlic, onion, peppers, tomatoes, courgettes etc and loads of herbs. I find couscous can be a bit dry but that's probably because I always seem to overcook pork!

I don’t eat meat but I’d definitely go for couscous and some type of veg cooked how you like so anything to steamed asparagus to roasted Mediterranean veg or peppers or steamed/roasted broccoli.

Or even peppers stuffed with couscous and roasted vine tomatoes
