New vegetarian and meal ideas

Happy New Year.

I've been vegetarian for seven days now and I am loving it.

I would be interested in what other people are cooking for some ideas and I will share mine.

I was hoping to start a thread with pictures of our meals as for me pictures inspire me to want to try new ideas and in the past I've had so many good recipes when I have asked.

Tonight I am going to cook courgetti spaghetti with petit poi's, spring onions and asparagus with some low fat halloumi on top. I'm going to cook it in garlic and then at the end add a tiny bit of truffle oil and stir through.

I will post a pic but it won't be till about 9 as I'm eating late tonight.

Ooh lovely!! We are having super veggie fried rice from deliciously ella's quick and easy book - one of my favourite dinner at the moment!! Highly rate the whole book to be fair, everything we've made has been extremely tasty!!

That tofu with fried rice looks lovely.

I've never tried tofu. What does it taste like? What is the texture like?

It tastes like nothing—absolutely nothing. But the super bland initial taste is exactly what makes it so great; it easily absorbs whatever flavour you’re cooking it with.

Veggie fajitas
Butternut and green bean curry
Roast cauliflower and butternut curry
(We love butternut squash especially pre-prepped in frozen chunks it’s so easy)

pasta and a veggie sauce
Chickpea/butter bean etc korma and rice
Stir fry and noodles

On a recent thread about meal planning someone put down Cyanide as their Friday night dinner. I think that’s veggie 😂

Not a recipe but more of a tip, Paneer cheese is a good substitute for chicken if you are making a curry... cube it and chuck it into a homemade surry sauce. Lots of supermarkets sell it, or if you live in an area with Asian (indian, pakistani) food shops they usually sell it.

Basically I cook a lot of Asian and Indian food, some Mexican, and pasta!

We had a really nice potato, mushroom and chestnut traybake tonight with sherry and Parmesan. It was from a book called the home cookery year which is not all veggie but lots are, or use meat only as a flavouring.

Warm salad of baked, spiced, carrots and chickpeas with nigella seeds on spinach and red onions.
