Easy cake recipes

I’m a reasonable cook but not really a baker. What are some tasty but easy cake/biscuit recipes I could try? Do you have any favourite recipes?

I made cupcake Jemma’s Devil’s Food Cake a while ago. It was so good and easy too. The recipe is on YouTube, along with a video. I like baking but never really excel in it so I would recommend. You can make it in smaller versions too.

Easy sponge cake.

Weigh 4 eggs. Then the same weight of sugar, margarine and self raising flour. Splash of milk and vanilla extract.

Microwave mug cakes are good for something dead quick and easy. I make them for the kids sometimes.

How do you make the mug cakes?

I always make this banana loaf. thehappyfoodie.co.uk/recipes/banana-loaf sometimes I make it in a 9" x9" brownie pan and cook it for about 30mins.

Here’s one recipe, just google them. They’re fine for a quick cake. Think I’ve made vegan ones before as well. For what it is they work well.

The best cake to learn to make is a basic pound cake.

Then you can adapt it in 10 different ways with lemon zest, orange zest, chocolate chip, chopped apple, sultanas soaked in boiling tea, chopped twix, malteasers, whatever
