This defrosted beef is safe to use isn't it?

Took it out of the freezer on Monday and let it defrost in fridge. Wasn't organised enough to cook yesterday. But I can cook it today right?

I get neurotic about meat freezing/ defrosting.

I don't know but I would. Chicken, I wouldn't risk.

Really? I vaguely thought I had 24 hours from the item fully defrosting to use, so in theory chicken would be fine too?

If it's been in the fridge it will be fine - it's probably only just defrosted probably.

I think it would be fine. I fine joints of meat take a long long time to defrost fully in the fridge. I would expect it is only fully thawed a little bit.

My late MIL once gave us roast beef sandwiches for Sunday tea. I had a few mouthfuls and then alarm bells rang I my head as it wasn't Haslet or Belly pork etc and so gave it to DH.
Good call as she told us she had found it in the garden and the dog had carried it in, eeew. Someone a few doors down had their garage broken into and had dropped some of the loot in her garden! But she reassured us it was okay as it had snowed and so had been kept cold!
