How long from start to finish simmering on the hob including starting off the onions/celery/carrot etc?

and then

How long after you've put the potatoes on top do you cook in the oven?

40 mins.

20 min on hob, although always mean to start earlier or use slow cooker

20 min in oven after adding mash. Or sometimes just 10 min under grill if it’s all hot already.

There’s a good method, and then there’s my disorganised method.

I remember a similar thread once and it was just competitive cottage pie cooking. If it doesn’t take you three days to make a cottage pie from start to finish you’re not doing it right basically.

i cook the mince and veggies for around 30 minutes with the potatoes cooking at the same time put the mash on top straight into a hot oven for around 30-40 minutes till the potato is nice and crispy on top

I simmer my mince and onion, and add the carrot. This is then simmered until I have cooked and mashed the potato. It goes in the oven until brown and crispy on top. Actual timings are less important.
On the occasion I have taken one out of the freezer and defrosted, I would allow at least an hour in the oven.

Mine takes hours. But only because I do the mince in the slow cooker the day before. Cool it, fridge it. Then the next day I top with cheesy mash and oven bake for at least 40 mins min.
