Completely uninspired after the Christmas indulgence. Trying to think of some nice meals, would be good to have a couple that can be batch cooked, frozen and eaten later in the week as well when I'm back at work.

I've already dealt with Christmas leftovers so this is starting from scratch.

No fish, other than that - anything goes really. Want to pack in lots of veggies.

What's on your meal plan for next week??

Just made meatballs to freeze. I make them regularly because I can pack veg in them and in the tomato sauce too; my toddlers are veg avoidant.. then after work I microwave from frozen while cooking pasta. 10 mins makes decent meal.

I'm doing a chicken dhansak, a chicken meatball chilli, a prawn stir-fry and salmon kebabs with air fried chips. That's as far as I've got. Resuming Weight watchers from Saturday after about 2 years (and 2 stone!!) break.

Sausage cassoulet? I chop onion, courgette, red pepper, carrot then soften in oil. Add lots of tinned tomatoes, mixed beans, paprika and stock. Simmer until soft and saucy then add cooked sausages.

Not authentic, but really cosy food.

Sausage cassoulet sounds lovely, could freeze half.

Going to google some ideas for a stir fry, I fancy that.

I'm the same, ploughed through all the Christmas leftovers for a few days with barely a vegetable in sight Blush
My plan for the next few days is:
Beef & Stilton Pie
Pork, apple & sage gratin
Lasagne
Shepherds pie
Steaks with peppercorn sauce & new potatoes
All to be served with masses of vegetables to try and balance out the rubbish we've eaten over the last week!

We also love a cassoulet but fry off some chorizo to top with sour cream and those part baked rolls hot from the oven.

This week we are having tomato and basil risotto with mozarella, fish Biryani (you could do chicken), veggie quesadillas, honey and mustard roast chicken thighs with root veg and mash.

Other staples in our house are stir fry (often a Monday quick dish with whatever meat leftover from Sunday roast) served with either noodles or egg fried rice, pasta pesto, baked potatoes with warm up chili/curry, lentil and chickpea curry, veggie chili, spag bol or meatballs, gnocchi with green veg and lemon.

One of my favourites:
Pastry squares:
pre made puff pastry, cut into rectangles (1 each). Mark a 1cm border with a knife by running gently down the pastry (don't cut through). Spread cream cheese on top up to borders. Wilt spinach in a colander by pouring boiled water over it, then chop finely. Sprinkle evenly over the cream cheese. Finely chop some feta cheese, spread this over the spinach.
Add freshly ground pepper.
Put in oven for 15-20 minutes until puffed up and going golden (180c). Great with roasted potato cubes!

You can adapt it to use left over veg, or cheddar instead of feta etc! If you don't have any cream cheese some mayonnaise with garlic can work too!

Butternut squash dhal using fresh or frozen butternut squash and red lentils in the slow cooker is lovely and super easy

Veggie lasagne is always a winner and can add loads of different veggies

Aubergine and sundries tomato pasta

Roasted veg with gnocchi Tesco has an easy recipe for this with pesto

Mac and cheese with broccoli, cauli, leeks, spinach or whatever veg you have added in

We’re having

31st Prawn and coconut curry
1st roast beef and trimmings
2nd beef enchiladas with left over beef
3rd pork ribs with rice and salad
4th Spaghetti carabonara

That’s as far as I’ve got.
