Anyone able to tell me what went wrong with my last loaf. Followed a recipe I found on a MN thread and have made several times before without issue. I gave it 9 minutes on speed 1 with dough hook, which I always do. It got 2 hours to prove and doubled in size, knocked back, folded into shape and another 45 mins proving at which point it pretty much collapsed when I slashed it
. It did taste okay, bit heavy and no nice crust. The only thing I did differently was with previous attempts I hand kneaded it for 3-4 minutes after the mixer knead.
Any ideas please as am just about to mix another? Thanks.
