Can I have your best vegetarian meal ideas please?

We're not veggie but want to eat less meat as a whole, so any simple veggie midweek ideas would be most appreciated.

We've recently done the same and some of our faves are veggie lasagne, veggie omelette for a quick mid-week tea, and Halloumi burgers Smile

Salads with roasted chickpeas and hummus.

Pasta with olives in a tomato based sauce

Veggie burger (there's lots to choose from)

Green lentil and vegetable lasagna

Sweet potato and butter bean curry

I always batch cook and freeze portions

Chickpea curry.
Lentil shepherds pie.
Mix tin tomatoes, lentils, spinach, feta. Cover with puff pastry. Bake.

Oh these are great suggestions thank you. We're having chickpea curry tonight (a Ree Drummond recipe which is so easy it's embarrassing but it's tasty).

I’m a vegetarian - would highly recommend The Green Roasting Tin cookbook for easy veggie meals.

Have just ordered it @ilikebooksandplants thank you for the suggestion. I've dug out Delia's Vegetarian book from years ago, I forgot I had it but that has some great recipes too.

Hugh Fearnley-Whittingstall's Veg Everyday is also a great book for ideas.
If the less meat is for environmental reasons it makes sense to include a reasonable amount of vegan stuff, or at least dairy-free.... Since dairy is also not great environmentally

It's probably my dc's (ages 7 & 2) favourite meal. We aren't vegetarian, but we do eat veg a few dinners a week.
