Everyone is bored with my bolognese, help me jazz it up [edited by MNHQ to correct typo]

I follow (loosely) Gino D'Acampo's recipe so I start with sofritto / use pork and beef mince / wine

I add a few extra bits as well (he doesn't use garlic in it Shock) but everyone is fed up of it.

Any suggestions for improvements or alternative recipes?

Marmite when you're making the sauce, balsamic glaze/ drizzle on the meal when it's ready.

I don't like wine in bolognese (or gizz). Do you want to change up the texture or the flavour? For flavour I use stock, a splash of balsamic, a splash of olive oil, depends how authentic you want to be but if you like arrabiata you could add sliced chilli.

Agree make other things for a while and come back to the spag bol when people start to miss it. When I made it all the time we got fed up of it as well.

Agree with Worcester sauce
Sacrilege , but a splodge of HP sauce
Oregano or finely chopped basil
Instead of mince can you stretch to braising steak?

Don’t do what I did - added a tin of tuna to make a sort of turf and surf. We had a takeaway that night!!!

Onion powder or small fine chopped onion.
Stock
Tomato paste
Basil
Oregano
Sugar
Garlic (tiny bit I don't like much)
Simmer for ages.
Tastes great.

Any parmesan rinds you may have, loads of tomato purée cooked out really well before you add liquids, a good dash of milk makes a big difference. Don't forget some sweetness in teh form of honey/sugar to counter acidity.

Also sherry rather than wine is very mellow in the sauce. And let it cook for ages. Serve with tons of torn basil and grated parmesan.

However, bacon lardons are lovely. I also really like Jamie Oliver’s recipe so maybe worth checking that out?

Smoked paprika, finely diced carrots and celery and some Worcester sauce
