Can someone help me with turkey stew?

We’ve stripped the carcass and boiled it for several hours with water/onion/peppercorns.

I’ve taken all the bones and skin out but should I strain the stock? I guess I should shouldn’t I but it seems a waste because there’s so many tiny bits of meat in there.

Then I guess tomorrow morning I boil it down to reduce it, add back the meat and some veg?
