Basically me and DP are really broke atm and spent too much on Xmas food two days ago in a fit of festive high spirits.

I need to pop to Morrisons for coffee today and I expect there will be a lot of veg going for pence (or is it too early? Would be better going tomorrow?)

So questions.... Can I just peel and chop carrots and parsnips and freeze them in bags? Or do the suppliers do something special to them when they make frozen veg for the veg aisle that stops them going soggy? Blanche first? Peel/not peel? I have very limited fridge space so would much rather be able to buy and freeze.

Any other boxing day tips for food bargains? I don't eat meat btw.

Also any parsnip recipes that isn't soup??

Blanch, dip in cold water then freeze

How about making winter vegetable soup? That can me easily portioned up and frozen in bags. Also, vegetable curry ( yum!)

Parsnips go really well in cakes. I confess that I got some extra just so I could make a big batch of soup and a traybake for the freezer

I would suggest that you hit the supermarkets later this evening if you can. For example, our local Tesco usually reduces all fresh goods by 75% + at 7pm. So I've had whole chickens for £1, loaves of bread for 20p, packs of veg for 5-25p. I go once a fortnight or so to stock up.

Thanks, these are good tips! I like the idea of having loads of veg in the freezer to make into soup of curries. I can freeze leaf veg can I?
