Cheesecake without gelatine

I want to make a crunchie bar & malteser cheesecake but the recipe I found has gelatine in it. I don't have any. Do I really need it? Does anyone have a recipe without it that they could share?

Do you have a lemon jelly or any jelly sachets?

FTMF30 · 23/12/2020 10:37

I've never used gelatine, just stuck it in the fridge overnight so it set properly.

I've never used gelatine in cheesecake, just cream cheese, double cream and sugar - never had a problem with setting. I got the basic recipe from the Philadelphia website

I’ve never seen gelatine needed in a cheesecake recipe, I just use Philadelphia with sugar & cream.

I'm vegan and have never used gelatine. Cheesecakes set perfectly well if left in a fridge overnight.

PippinStar · 23/12/2020 11:07

@cariadlet what vegan cream cheese do you use? (Sorry for thread hijack!)

cariadlet · 23/12/2020 11:25

@PippinStar I prefer Toffuti but I haven't been able to get hold of it recently. I'm making a cheesecake tomorrow and using Sainsburys free from vegan cream cheese. I don't think the flavour will be as nice but am going to make a chocolate orange cheesecake so hope those flavours will be the main ones we taste.

PippinStar · 23/12/2020 11:27

Okay great thanks. I’ll try to find tofutti, the only ones near me are Violife or Sheese. Hope it turns out well!

isseys4xmastinselcats · 23/12/2020 11:40

i use icing sugar cream cheese and cream and mine always sets

LifeInAHamsterWheel · 23/12/2020 12:24

Great thank you I'd never heard of using it either.

I think I'll use this recipe and just fold in the maltesers and bashed up crunchie bars at the end?

dr oetker sell vegan 'gelatine' which is great and sets much quicker.

pinbinpin · 23/12/2020 12:54

I've done loads of cheesecakes, baked and non baked and never put gelatine in?

TheFormerPorpentinaScamander · 23/12/2020 12:55

I've always made it with cream cheese, double cream and sugar. But I don't usually make flavoured cheesecake, so no fruit or anything. Unless we want to add it individually to our slice.

Ex DP did buy the wrong cream cheese once though. He didnt notice until he'd made the cheesecake and taken a massive bite! Apparently garlic and herb cheesecake is not good Grin

scentedgeranium · 23/12/2020 12:55

errrrr Cheesecake is my go-to dessert. Baked, not baked, fruity, chocolatey, everything and I have never used gelatine!

LifeInAHamsterWheel · 23/12/2020 15:05

Oh god @TheFormerPorpentinaScamander how gross!
