Made too much pastry - can I freeze it?

I've made twice as much mince pie pastry as I need, would it be ok to freeze it until I can get some more mincemeat to make a second batch? It's a sweet pastry with egg yolk and a dash of milk, which is why I'm a bit twitchy about just keeping it in th fridge.

Label it well. It’s indistinguishable from pizza dough frozen & shortcrust pastry pizza was a bugger to get on the pizza stone.

I didn’t realise my mistake till dh said it tasted like pastry.

Yes. I always make up a large batch, divide it and freeze. It can either thaw naturally or if you're in a hurry, 30 seconds or so in the microwave (until thawed but till cold ideally) works well.

It will be fine in the fridge for ages! When were you planning to use it?

Realistically it will probably be a least a week, maybe two by the time we've eaten our way through the christmas food pile and are ready to face more mince pics!

I only intended making one batch but I forgot to halve the pastry recipe, hence why my pastry : mincemeat ratio has got to pot Smile

DH defrosted pizza dough to make mince pies last week, thankfully he put it in the fridge the day before and I noticed it was proving :D. We've also had crumble topped with cheese on top of a savoury dish instead of breadcrumbs...that was interesting.

I now label everything, I used to do shapes, round is pizza dough, rectangle puff, square short......I just could never remember which shape was which.
