Can anyone recommend a good vegetarian cook book?!

Can anyone recommend a good veggie cook book for a Christmas present for my DB and SIL who have really reduced their meat consumption this year. There's so many online I've got too much choice.

They've got 3 kids under the age of 5 so nothing too fancy that takes 50
Ingredients and 3 hours to produce a meal!

Madhur Jeffrey World Vegetarian is a great starter book - will let them try lots of different veggie cuisine and decide what they like

Hugh FW Veg Every Day is good, lots of interesting ideas

If they like Asian food then Meera Sodha East or her Indian ones are good

Hugh Fearnley Whatshisface does a really good one called 'River Cottage Veg Everyday' - perfect for meat eaters as you don't end up feeling cheated. Relatively straightforward recipes too.

Meera Sodha’s Fresh India is my most used cookbook. Everything I’ve tried from there has worked beautifully.

Wow, thank you so much for all your suggestions. So difficult to choose as they all look great, might add a couple onto my own Christmas list. I've gone for Meera Sodha Fresh India for my DB as he loves Indian food, so I think it will be a hit. Smile

Anna Jones also has lovely books. She is very generous in sharing her recipes in her weekly emails too.
