My oven has packed up and I have already defrosted a load of chicken drumsticks

I was going to cook them in the oven in a peri peri rub. Make a sort of fake Nandos.

The hob (gas) is still working. What's the best way to cook them?

Bit of oil, sprinkle on the rub or some salt and pepper, fry on a medium heat for 10 minutes each side.

I’d either marinate then fry them or griddle pan. Or if you have a big casserole dish you could cook them in that with the lid on?

Brown the outsides and make a chicken casserole (wine, leeks, stock, carrots, herbs, flour made into a roux with the juices from browning to thicken). Cook on hob for 60-90mins.

Do you have something reasonably heavy bottomed so that you can make a casserole on the hob? I make a popular one with onions and pancetta/bacon fried gently, then add a tin of tomatoes, a handful of red lentils, about a pint of chicken stock, a good dash of balsamic vinegar or white wine, chicken pieces and any veg you happen to have. Simmer gently until the chicken pieces are cooked.

I do a rice and chicken dish which is easy, you can adapt it with your Nando’s flavouring.

Marinade your chicken and brown in the pan. Remove when browned (about 10 mins).

Use the fat in the pan to sauté some chopped onions, peppers if you like.

Using 1.5 times water to rice ratio, add in your rice and stir to coat in the juices. Then add your (boiling) water, and the chicken pieces on top.

Add lid. Bring to the boil, and simmer for ten minutes. Then turn it off the heat and leave to steam for ten minutes.

Perfection Smile. We’re having it tonight with chorizo - I use tomato purée and Cajun spices in the water to make the rice delicious. In fact it’s very like the Nando’s spicy rice.
