I've been a bit lazy with regards to cooking (cooking is my job as I'm disabled and home full time, dh doesn't get home until 7 at the earliest). Just been churning out same old, same old. So 7 weeks ago I decided to do one new recipe each week, and amazingly I have done it!

So now I'm looking for inspiration!

I'd like to eat more plant based food but dh likes his meat. Have ds (18) and dd2(17) still at home, ds eats loads! Dh and I love fish, dc don't. We need to get more veg in our diets. Chicken is our go-to meat.

So far I have done:

Chickpea and spinach curry
Beef paprikash
Chicken cacciatore
11-veg stir fry
Thai green curry
Moroccan chicken
Burnt aubergine chilli.

Folk have liked and asked for all of these again, apart from the paprikash, which dh said tasted of school dinners.

So, hit me with your crowd pleasers. And if poss where they come from? Thanks very much!

I cooked Meera Sodha's pumpkin, bean and coconut curry the other week. Was delicious and really easy.

I used to cook loads, but rarely do now since Dd moved out.
I end up eating cheese/crackers/cold meats/olives etc.
I can never think what to cook just for me and having a freezer full of leftovers has lost its appeal too.

Lasagne with lots of veg and green lentils. Super filling and the lentils are really meaty so keeps meat eaters happy

Mixed bean chilli but I add rice to soak up the liquid and serve with tortillas wraps and dips can add loads of veg to the chilli

If you like curry butternut squash dhal is nice

Cod with roasted veggies - Chuck in one pot add wedges or part cooked new potatoes

Do you like risotto? I have a simple blueprint for doing them mainly in the oven so you do have to stand stirring for 20 minutes... You could add whatever you fancy to them then and serve a bit of meat as a side order for your DH
