Recommendations for a really good Turkish cookbook?

Just that, really - any ideas? Ideally I want something that tells me how to make good shish and beyti kebabs at home, but would also open my eyes to the national dishes that don't make it into the restaurants!

Try www.johngregorysmith.com, his website has a lot of recipes to try before you buy. Middle eastern is his forte.

I have The Complete Middle East Cookbook by Tess Mallos, which has loads of recipes but not enough photos. It's probably out of print but you can pick up second hand copies.

The sis kabab recipe recommends grilling over charcoal.

I have Nevin Halici's Turkish Cookbook. I found it pretty good, a bit of history regarding the dishes and very easy to follow although no photos. I have had my copy for 30 years and is most used cookery book in the house. It is still being published I think.
