What do you do with a root veg medley pack?

I made a soup with the last pack. Just added some garlic and veg stock and it was lovely.
What else do you do with one?

Casserole? Are you vegetarian, if not then a lovely slow cooked beef stew, or if you are then I'd use chunky mushrooms instead (a mix of portobello chestnut etc, not just button!) with green or brown lentils to add bulk.

Mash - top a shepherds pie with it
Beef stew / chicken casserole anything that needs to be slow cooked
Chopped and roasted with a roast dinner
Mainly soup though
