Are champagne cocktails any good...

...or are they a waste of champagne (or any other quality sparkling wines) ? I'm thinking specifically of those made by adding Chambord or Cassis, Kir Framboise and Kir Royale etc. I've never tried Bucks Fizz.

IMO only cocktail worth making with champagne is the classic - sugar cube, bitters and cognac. The others would be a waste, just use a crémant or cava

Love a kir royale - perfect holiday drink, reminds me of planes and travel.

A classic champagne cocktail is definitely the best though.

Mimosas I make with sparkling oyster bay. No need for champagne

Waste if it's a Bollinger, Vervé Cliquot,

A lovely way to make a Prosecco or Cava a bit more va va voom

I enjoy adding chambord or St Germain elderflower liqueur

Thankyou all. It's an academic subject for me as I never buy champagne anyway! Some folk blend it with Guinness which I believe is called a Black Russian. It doesn't appeal.

I had too many lovely cocktails in my only night out in months. Was gin topped up with champagne with a twist of lemon. Was heavenly (until the hangover and the credit card bill)

Actually yes it was Chapel Down fizz rather than champagne. Probs could have been any cheap fizzy plonk.

What sort of bitters ? I only know Angostura and Orange.

This is true!

Although I was drunker than I've ever been when people bought these for my in a bar on my birthday ages ago. I hadn't factored in the cognac and double vision by the night's end.

Angostura bitters for classic.
A good cremant d’Alsace or similar is a v good sub for champagne for any other cocktail.

Totally agree, a classic champagne cocktail is a good use of the real thing but for mimosas, kir royales etc just use any dry fizz. Cremant de Loire or Cava are fine, prosecco too for a bit lighter and sweeter although tbh the difference is negligible. Small tip, clementine juice is nicer than orange in a buck's fizz/ mimosa, BTW!

It's Black Velvet. A Black Russian is vodka and Kahlua.

That's called a French 75 and is the best cocktail but very expensive in most places.
