Good friend arriving back from work trip & I promised to take dinner at 7.

What’s nice and gentle & welcoming home? I don’t have long now, so no slow cooked beef stew, alas. He likes plain food v much...

Risotto? I bung it all in at once and give it lots of stirring to release the creaminess of the rice.

Roast chicken, Yorkshire puddings, roast honey glazed carrots.

Hmm yes was considering risotto! Wish hadn’t eaten it just last night... maybe I can make it anyway.

Forgot to say - I’m taking it to his house, so roast chicken might be messy.., plus no time now to roast, I don’t think...

Baked salmon parcels with pesto. steamed broccoli, fine beans, boiled new potatoes topped with butter, pesto and black pepper, squeeze of lemon.

Roast veg tray bake - mix in couscous and chickpeas

Paella is a good one pot meal....
