Urgent cake help please

My cake mix is lumpy. I think the butter was too cold, I've mixed and mixed but it's not going smooth. Should I bake and hope for the best or attempt to warm it to melt the butter? Don't want scrambled eggs!

If it’s just little lumps butter, it will be ok to bake.

Can you use a slotted spoon to fish out the lumps and then add a small amount of the remaining mix. Whisk until smooth then whisk in the rest of the mixture. You need an electric hand mixture or mix really hard. Do not cook with the lumps or try to melt them.

Unfortunately I think your biggest worry might now be the overmixing rather than lumpy batter, I always mix mine very, very sparingly so it's often a bit lumpy looking but has never failed to rise

You shouldn't add the eggs until you've properly creamed the butter and sugar. You could try whizzing it in a mixer/blender.
Or just stick it in the oven and hope for the best!
Next time - everything at room temperature including the eggs.

Give it a go, cakes are fickle beasts (and you could always use it as a fancy flan instead)

I cubed the butter and gave it 30 seconds in the microwave before I started to soften it, obviously wasn't enough. I can't serve with custard as it's a birthday cake Sad I'd have started again but have no butter left. Never mind, it's in the oven now. Fingers crossed!

It looked shit and didn't rise much so I cut it up for the dc and us. It was bloody lovely Grin unfortunately my replacement using stork instead of butter is god awful so no birthday cake tomorrow. Will have to do an emergency coop run before work Angry
